Recipe of Any-night-of-the-week Manakish

Hi everyone, this is Drew, welcome to my recipe page. Today we are going to prepare a special dish based on the Manakish recipe for every night of the week. This is one of my favorite food recipes. I will do better this time. It will smell and look great.
When it comes to cooking, it's important to remember that everyone starts somewhere. I don't know anyone who comes with a wooden spoon ready to go. After indulging in Persian cuisine last year, I still crave Middle Eastern cuisine. I fell in love with the ingredients they use and how I miss the wonderful smell in my kitchen. The idea for this cake came to me when I wanted to use up leftover sumac. "Instead of buying ready-made thyme, why don't you use sumac to make your own thyme and why do I need thyme? Yes! Manakish! I was talking to myself. Hahahaha! Bread is our first meal. To this day are we still eating bread, especially flat bread, of all shapes and sizes around the world. It's delicious! When we eat tortillas, we taste a variety of ingredients from different countries and cultures. Especially the wonderful aroma that comes from the oven I walk through the streets of a Middle Eastern country I serve Manakish with a simple salad I couldn't find fresh cucumber and mint at my local grocery store so I substituted grated carrot and finely chopped cilantro respectively I want it 100% vegan like.I used vegan feta which is a tofu based cheese and sprinkled it over the manakish.It's a pretty easy dish.Hope you try this one recipe and fill your kitchen with good flavor.
Ingredients and spices for making Manakeesh:
- Manakish:
- 1/2 cup warm water
- Activated instant yeast, 1 + 1/8 tsp.
- 1/2 teaspoon of sugar
- 192 g bleached all-purpose flour
- 1/2 teaspoon sea salt
- Olive oil, 2 tablespoons + more for greasing
- Za'atar:
- 1/8 cup sumac
- 1/4 cup extra virgin olive oil,
- 1.5 tsp dried thyme
- 4 red radishes, thinly sliced
- 1.5 tablespoons dried oregano,
- 1 handful of chopped carrots
- 1/4 teaspoon black sesame seeds
- 1 bunch of finely chopped coriander
- 3/4 teaspoon white sesame seeds
- 6 cherry tomatoes, diced
- some sea salt
- Extra virgin olive oil, a drop
- some sea salt
- Salad:
- some black pepper
- Juice of 1 fresh lemon
- Vegan feta cheese, a few pinches
Steps to make the Manakish
- Prepare the dough. Pour the water, yeast and sugar into a bowl. * The water must be warm, if it is too warm it will kill the yeast.
- Keep aside for 10 minutes. In another large bowl, add flour and salt. Mix well. Make a hole in the middle.
- The yeast should now be fluffy. Slowly pour the yeast mixture into the well and mix with your other hand or with a spoon. Add olive oil. Mix well until the mixture turns into a paste. You can do this by hand or with a spoon.
- Once the dough forms, knead the dough in the bowl until all the flour and dough have been incorporated into the dough, about 3-4 minutes. Place the dough on a work surface and knead for another 5-6 minutes. The dough should be soft, smooth and sticky, not sticky. It must pass the window-to-glass test.
- If the dough is too dry, add water 1 tablespoon. If the dough is too sticky, add flour a tablespoon at a time. Form a ball of dough. Brush the ball of dough lightly with olive oil and place back in the bowl. Cover with plastic wrap and let rise for 2 hours or until dough has doubled in size.
- While the dough is rising, prepare the thyme. Mix all the ingredients together in a bowl. Mix until well combined. Move.
- Prepare a salad. Mix everything except the vegan feta cheese in a bowl. Stir until everything is well mixed. Place in the refrigerator until ready to use.
- Prepare the Manakish. Once doubled, use a scale to divide the dough into 4 equal sized balls. Cover with a damp, lint-free kitchen towel, brush dough balls lightly with olive oil and leave to rise again for 30 minutes. Preheat oven to 205°C or 400°F.
- Grease the baking sheet with a little olive oil. Place butter paper on a baking sheet. Place a ball of dough on a baking sheet. Press the ball of dough with your fingers, making a 5 inch round disk. It doesn't have to be a circle.
- Finally, tap the disc with your fingers to make dimples. Sprinkle 1 tablespoon of thyme over the dough, leaving 1/8 inch edges. Repeat the process for the remaining dough balls. Do not overfill the pan.
- Manakeesh should be baked in batches. Bake in the oven for 15-20 minutes or until the bottom is golden brown and crispy. The crocodile should be liquid.
- Remove from the oven and leave to cool on a wire rack for 15 minutes, until the thyme is soaked in the mixture. Served with a side salad. Sprinkle some vegan feta cheese on top. Do it immediately.
The small steps you take to create balanced meals for your family matter more than any animal jump. Before you know it, you may find that you have more energy and overall well-being than you ever imagined before you changed your eating habits.
