Ingredients and spices for the preparation of Lamb/Beef/Chicken Pulav (stewed rice with lamb broth):
- 750 g of lamb (1 kg of beef or chicken)
- Ingredients (1 small onion, 5 bell peppers, 5 cloves, 1 cinnamon stick
- 5 cardamoms, 3 bay leaves, 4 green peppers, 2 tablespoons of salt,
- 1 inch ginger and 5 garlic cloves, minced 1 cup whole cilantro
- seeds, 1/2 cup of fennel seeds, 1 tablespoon of cumin and 4 cups of water)
- Rice 3 1/2 cups of washed and soaked rice. (10 minutes)
- For masala (1 bunch of coriander leaves, 1 clove of garlic, 1 inch of ginger
- 7-8 green chillies (after you),
- 1 tablespoon ground cumin) and reserve
- 1 cup of oil, 1 small onion, 5 cloves, 5 cardamom, 6 to 8 peppers, 2
- bay leaf, 1 tablespoon of cumin and 1 piece of cinnamon
- 2 large potatoes, 1 cup of peas
- Lettuce (1 onion, 1 tomato, 1 cucumber, 1 teaspoon of salt, a little coriander
- leaves, 1 chili and juice of 2 lemons)
- Fried onions to decorate (optional)
Steps to Prepare Lamb/Beef/Chicken Pulava😊 (Cooked Rice in Lamb Broth)
- First prepare the broth, wash the lamb, grind ginger, garlic, chili, add pepper, cloves, cardamom, bay leaf, cinnamon, cumin. Wash the coriander and cumin seeds with a strainer. Cut the onion into small pieces.
- Now collect everything. (Ingredients for the broth see above) with salt Once the lamb is cooked, remove and reserve the broth
- Your tomatoes are ready. Now grind the coriander masala leaves, ginger, garlic, chili and cumin. See ingredients. Now take 1 slice of onion, 5 cloves, 5 cardamom, 1 tablespoon of cumin, 2 bay leaves, 1 cinnamon and 6 to 7 chillies.
- Now heat a cup of oil in a large frying pan. Then add the onion with the garam masala (photo 3 above), when it starts to brown add the masala on top. Now cook for 5 minutes, the oil will rise to the top. Now add the potatoes and peas.
- Mix well. Cover the pot and cook for 5 minutes. Now add the cooked lamb and strained broth. Mix well, then the rice.
- Bring to a boil after adding the juice. Now cover the pot and cook over medium heat (check for salt, now add 1 tbsp), stir when the rice has absorbed most of the liquid (pic 3)
- Cover the lid, place a cloth over the container to keep steam and moisture inside. keep on low heat. Keep it away from heat (10 minutes) but do not open the lid. prepare a salad with onions, tomatoes, peppers, coriander leaves, then put everything in a bowl and add the juice of 2 lemons and 1 tablespoon of salt.
- The salad is ready, now we serve the lamb pulav. decorate with fried onions and your kitchen will smell of all the delicious flavors. Enjoy it!
